Cranberry Quick Bread

Prep Time 15 minutes
Cook Time 45 minutes
Servings 2 loaves

Ingredients

  • 3 cups flour
  • 1 tsp. salt
  • 1 tbsp. baking powder
  • 1 cup sugar
  • 1 1/3 cup orange juice
  • 1/4 cup melted butter or oil
  • 1 tsp. vanilla
  • 1-1 1/2 cups frozen, fresh or dried cranberries
  • 1 tsp. cinnamon
  • 1 tbsp. rind of one orange

Optional: Add 1 cup of chocolate chips or chopped walnuts

Instructions

  1. Mix all of the dry ingredients together and set aside.

  2. Mix all of the wet ingredients, then add to dry ingredients. Mix until just blended.

  3. Pour batter into 2 greased loaf pans.

  4. Bake at 350 degrees for 45 minutes.

  5. Cool first and enjoy!
